It's the new fun food day in town and it's all about eating eggs on a Wednesday. Cause we can all use some mid-week deliciousness, right?

And it doesn't get easier than the perfect little nutrient bombs that are the humble egg.

They are easy to make, affordable and just scrumptious.

They're also high in choline, packed with high-quality protein and they've got so many nutrients in there too.

Plus, eggs are super versatile! You can enjoy them so many ways.

And I hope you don't limit your eggs to breakfast time. Oh no. Let's put an egg on it and enjoy eggs anytime of day. (A fried egg on leftovers is one of my most favorite things.)

BUT, since I know most of us do love eggs at breakfast, today I wanted to share some easy make-ahead egg breakfasts.

Because I don't exactly have time to make a hot breakfast during the week.

I'm up and on deadline for my job as a health and nutrition editor at 6:30 a.m. every morning. That's also when my kids get up to eat, get dressed and get ready for school before my husband whisks them out the door at 7:15.

And even if your school is currently in your living room, I'm guessing you don't have a lot of time — or energy — for making breakfast in the morning most days either.

So, let's make some things ahead and then we just have to pull them out and reheat. Way more do-able. It makes mornings so much less stressful, and that's always a good way to start the day.

Final thing I'll leave you with is a little home state pride fun fact. (You know I'm a nerd and love this stuff!)

North Carolina is BIG in egg production. We have 9 million hens raised in egg farms in the state that produce 7.5 million eggs a day! That's about one bird per person. 😳

So I guess I come by my love of eggs honest.
